Pork Charcuterie Board
Total time: 30 min.
Serves: 5
Ingredients:
Grapes
Local cheese
Assortment of crackers/ crostini
Local whipped honey
Prosciutto, 1 cut up peach, mozzarella balls, fresh basil, balsamic vinegar (for Peach Prosciutto Cups)
1/4 cup white vinegar, 5 tablespoons of sugar, 1 English cucumber cut into slices (for the vinegar cucumbers)
Salami (for salami rose)
Fig jam and bacon
Directions:
For the Peach Prosciutto Cups, preheat the oven at 400 F. Grease a muffin pans. Place prosciutto in the pan to form a cup. Bake for 10 min. Add peach slices, mozzarella balls, drizzle balsamic over the top and garnish with basil.
A salami rose is easy to make (you can also use pepperoni). You will need a mason jar. Begin folding the salami around the mouth of the jar, continue folding until you cannot fit anymore pieces of salami. Gently wiggle the salami rose out of the jar and place on your board.
I was going to make homemade fig jam, but I could not find any fresh figs, so I did the next best thing and bought some locally made fig jam and crostini from a farm stand near me.
Vinegar cucumbers are a staple in my house, and I also wanted to add some green to the board. Fill a small bowl with white vinegar, add about 5 tablespoons of sugar. Stir. Add cucumber slices to the mix (English cucumbers are best). Store in the fridge until ready to serve.
The whipped honey and cheese were purchased locally, and the grapes are from the store. Use them as fillers for your board.
Honey Mustard Ham Steak
Total time: 30 min.
Serves: 2-4
Ingredients:
1 medium Ham steak
1/4 cup brown sugar
1/4 cup honey
1 tablespoon apple cider vinegar
1 tablespoon Dijon mustard
Directions:
Add glaze ingredients to a small saucepan
Simmer for 15 minutes on medium heat
Stir occasionally
Cook ham steaks on each side over charcoal or gas for 4 minutes
Add glaze to each side
Zucchini Steaks
Total time: 30 min.
Serves: 2-3
Ingredients:
2 large zucchinis
1/2 cup feta cheese
1/4 cup Parmesan cheese
2 slices of bacon
Directions:
Preheat oven to 400 F
Like a baking sheet with parchment paper
Wash, top and half the zucchinis
Spoon out part of the middle of the zucchinis creating a ditch all the way down
Fill the middle of the zucchinis with the feta and Parmesan
Top with uncooked bacon pieces
Bake for 20-25 min.
